Hot Chocolate Cupcakes

This new recipe was a idea my son had. He seems to like to bake just as much as he likes to lick the frosting bowl. We made them last night and they are perfect. My neighbors even came over… great timing and were able to see and taste the final product. Both gave thumbs up. Yeah! Happy Baking!

Hot Chocolate Cupcakes

1 triple chocolate fudge or dark chocolate cake mix
3 eggs
1 teaspoon vanilla
1 cup whole milk
1 pkg. hot chocolate mix or 2 tablespoons of your favorite hot chocolate powder mix
Mini marshmallows
Chocolate fudge sauce

Mix together cake mix, eggs, vanilla, milk and hot chocolate powder mix. Drop batter into paper lined cupcake pans. Fill 3/4 full. Bake at 350 degrees for 15-18 minutes until cake springs back when lightly touched.

Remove from the oven and allow to cool until easy to handle. Spoon fudge onto each cupcake and top with mini marshmallows. Serve while still warm.

    I’m so sad that I missed you today- I was at Costco, but not at the same time you were there. I hope our paths cross another time. Best of luck with your book. You have some great ideas.
