Apple Caramel Quinoa Porridge- Feeding the masses
Okay folks. Here’s a hearty and sweet quinoa porridge just for you! I made it at the Rooted in Truth Retreat last weekend for Core 7 Fitness. It’s NEW and delicious. Dairy free- gluten free.
2 cups quinoa
4 cups water
1 tsp kosher salt
1/3 cup brown sugar
3 Honeycrisp apples, cored and diced ( I left the skins on)
1/2 cup butter
1 cup brown sugar
1/2 cup Crown Maple Bourbon syrup (available at walmart)
12 oz. whole coconut milk
First- make the quinoa. in a large pot, add the quinoa, water, salt and 1/3 cup brown sugar (you could also use a sugar substitute). Bring to a simmer and gently boil for 6-8 minutes. Remove from the heat and place a lid on the pot. Let it sit for 5 minutes.
Meanwhile, make the caramel apple sauce. Yum. In a medium pot, over medium heat. Melt the butter and 1 cup brown sugar. Once is bubbles a bit and it melted, add the diced Honeycrisp apples. Simmer and cook for 3-4 minutes. Remove from the heat and add the maple bourbon syrup. Allow the syrup to cool slightly.
Whisk the coconut milk into the cooked quinoa just before serving. This makes it rich and creamy and divine.
To serve- place about 3/4 cup quinoa porridge into a bowl, then about 1/3 cup of the apple caramel maple bourbon sauce on top.

*This recipe feeds 8 people. I doubled it to make enough for the retreat. You can also package up individual servings for meal prep!
