BLT Gnocchi- Yum!
When I wake up hungry, I create my best recipes. I’m not sure why. But that’s how it is.
Gnocchi is always a good idea. And its fast, usually a hearty meal in less than 20 minutes. In this case, it was 10 minutes, start to finish…. even with photos and a few bites to make sure it’s perfect.
BLT Gnocchi
1 lb. potato gnocchi, prepared
1/2 cup fresh basil leaves
1/2 cup heavy cream
1/2 cup chicken broth
2 tbsp. Garden Gourmet basil paste
1/2 cup cooked bacon pieces
1 large tomato diced
1/2 cup Parmesan cheese
I start by browning my Gnocchi in some butter until at least one side is crispy.
Then I added large basil leaves. Make them crispy too… only takes a minute or so. Remove the basil and cool on a paper towel.
Have you ever had crispy basil? Oh, it’s so good.
Then add the chicken broth, basil paste, and simmer for 1 minute. Then add the heavy cream and Parmesan.
Then assemble with your diced tomato and bacon. Add them all together and serve with more Parmesan if desired. YUMMO.
