You’ll see my excitement, for this great dinner or any meal idea, and how it’s just gonna keep going. And it has. It’s now a breakfast tortilla pizza.
Breakfast Tortilla Pizza
7 Tortillas (fresh is my favorite you can even do GF)
Cooked breakfast sausage
Basil paste or pesto
Italian cheese mix/ Monterrey Jack cheese
Eggs, cooked to your liking (we love sunny side up and poached)
Preheat your oven to 500° broil. Use an oven proof skillet, brown your tortilla in a little olive oil on one side, flip the tortilla over, while the tortilla is browning on the second side, top with basil paste, or pesto. Then thes cheese, sausage, bacon, ham slices, asparagus & green onion. (all while the second side is browning.)
Once the bottom of the tortilla is browned, it’s time for the pizza to be finished in the oven.
Place the skillet in the broiler for 1 to 3 minutes, watching closely.
Remove the skillet carefully, top the hot pizza with arugula, Parmesan cheese. Top with an egg, and black pepper. Repeat.
