Chocolate Chip Cookies (low sugar & gluten FREE)

A great little cookie….

Gluten free? Low sugar? Chocolate chips? I’ve got a cookie for you.

I wanted a little treat, and altered my favorite tried and true recipe to make this delicious gem of a cookie. I’m sharing it with you today.

Tender, fresh, chocolate chip cookies.

Health(ier) Chocolate Chip Cookies

1/2 c coconut oil

1/2 cup butter

2 eggs

1/2 cup sugar or sugar substitute

1/2 cup brown sugar

1 tsp. vanilla extract

2 tbsp. cornstarch

2 1/4 cups 1:1 Bob’s Red Mill Gluten Free flour mix

1 tbsp. baking powder

1/2 tsp. kosher salt

Preheat your oven to 350 degrees.

Cream together your coconut oil, butter, eggs, and sugars. Mix on medium speed until light and fluffy about 2 minutes.

Then add the cornstarch, flour, baking powder and salt. Slowly mix together just until the dough comes together and is not sticky. Then add your favorite chocolate chips. We love dark chocolate chips around here. About 2 cups, or 12 oz bag.

Using a cookie scoop, place 12 scoops of dough onto a parchment lined baking sheet, evenly spaced and bake for 8-10 minutes until soft, but cooked through. Remove the sheet from the oven and let the baked cookies cool and set. Repeat until all the cookies are baked. This recipe makes about 30 cookies, if you don’t eat all the dough first. Ha ha ha ha!
