Chocolate Covered Strawberry Cupcake (NEW)
Look at these beauties! Since I am the food committee at our school ( so happy I am next year too) I made these for our wonderful teachers. They were super easy, and very gourmet if you know what I mean. My kids and I got a little carried away with the chocolate drizzle- but I can’t blame them! It was fun.
Chocolate Covered Strawberry Cupcake (NEW)
1 box dark chocolate cake mix
3 eggs
1 cup half and half
1/2 cup cocoa
1 tsp. vanilla extract
Chocolate Butter Cream frosting
24 large strawberries
Chocolate for dipping and drizzle
Mix together the chocolate cake mix, eggs, half and half, cocoa, vanilla extract- batter will be thick, but that is what you want. These cupcakes will be more like a pound cake- but they have to be stable to hold up to the strawberry and the frosting.
Bake at 350 for 15-18 minutes until the cake springs back when lightly touched. Remove from the oven and cool completely.
Wash your strawberries, leaving the leaves on. Once the strawberries are dry, dip in melted chocolate, and place on parchment paper to set. Drizzle with other colors (as shown). Set aside.
Frost with Chocolate Butter Cream- even chocolate ganache would be great too! My mouth is watering just thinking about it! Then place your prepared strawberry on top. Refrigerate until ready to serve.
