Holy cow! A cookie that is healthier, and tasty. Soft and moist, not dry and crumbly.
Coconut Chocolate Chip Cookies
1 cup coconut oil
1 cup unrefined coconut sugar
1 pkg. instant Vanilla Greek yogurt (4 oz. pkg. powder)
1 tsp. vanilla extract
1 tbsp. baking powder
2 3/4 cup whole wheat pastry flour
2 cups semi sweet chocolate chips
Cream together the coconut oil, eggs, sugar and instant pudding powder. Then add the vanilla, baking powder and slowly add the flour. Once the cookie dough has come together, add the chocolate chips, but do not over mix the dough.
Scoop onto a baking sheet into small 2″ rounds and freeze for 20 minutes.
Then bake 2″ apart on a baking sheet at 350 degrees for 10-13 minutes, or until slightly golden. Remove from the heat to cool. Keep in a airtight container.
Makes about 36 medium size cookies.
