Dark Chocolate Cream Pie
We really love PIE. So over the next few weeks, I thought I’d share some more of our favorites. Next up- this delicious one. Why not start with the chocolate? Chocolate makes everything better.
Dark Chocolate Cream Pie
4 oz. cook n serve chocolate pudding powder
1/2 cup cornstarch
1 cup sugar
1/2 cup dark cocoa
5 cups half n half
2 eggs, whisked together
Whipped cream
Chocolate cookie crust (premade or you can make your own)
Add sugar, pudding powder, cocoa, and cornstarch to a large saucepan. Whisk together. Add whole milk or half n half and eggs. Stirring constantly, bring to a boil. Boil pudding for only 1 minute. Remove from heat. As pudding cools, mix with beaters for 3-4 minutes. Beat every 10 minutes or so until totally cool. Room temperature.
Whip the heavy cream until stiff peaks form. Add ½ cup powdered sugar and 1 tsp. vanilla. Set aside.
Pour the cooled pudding into a prepared chocolate cookie pie crust or baked and cooled pie crust. Smooth out covering to the edges of the pie crust, cool. Then top with whipped cream.
