Dinner Rescue: Creamy Tomato Pesto Gnocchi
Here’s your new 15 minute meal for the week. I’ve made it multiple times in the last few weeks, and we simply can’t get enough.
Creamy Tomato Pesto Gnocchi
1 lb. pkg. gnocchi
1 tbsp. olive oil
1/2 cup Parmesan cheese or nutritional yeast
1/2 – 3/4 cup vegetable broth
1/4 cup heavy cream or whole fat coconut milk
4 oz. Classico Sundried Tomato Pesto (see pic below)
In a large skillet over medium high heat, add the olive oil and gnocchi and start to brown your gnocchi on one side. About 2-3 minutes. Don’t stir the gnocchi at this time.
Once the gnocchi is browned, add the broth, and simmer for 3 minutes. Then add your cream, Parmesan cheese and Tomato pesto. Stir to combine and serve immediately. Garnish with fresh basil and more cheese is desired.
