Fueled: Everything Bagel Breakfast Tortilla

I love variety when it comes to breakfast. And savory options are my favorite. So here’s a healthier version of an everything bagel with salmon. See, while eating healthy, you don’t have to sacrifice flavor or comforts.

Everything Bagel Breakfast Tortilla

1 lb. salmon fillet

4 oz. goat cheese

Arugula

6 Cassava Flour Tortillas slightly browned

1-2 tbsp. Everything Bagel Seasoning (you can make your own here go to the bottom of that recipe)

Avocado for garnish

You’ll want to make a bunch. They are so good. And can meal prep really well! You can eat these cold, warm or room temperature. Wahoo!

Preheat your oven to 420 degrees. Place your salmon on a baking sheet, season with salt and pepper and place in the oven to roast for 20 minutes.

Remove the salmon from the oven and cool slightly. Break the cooked fish into 6 equal servings.

In a large skillet, cook your tortillas til golden and warmed through. Spread some goat cheese on the warm tortilla. Top the cheesy spread with some arugula, salmon and sprinkle with everything bagel seasoning. Garnish with a slice of avocado.

Fold in half to eat, or eat like a tostada. Great for a light breakfast, lunch or dinner. Or whenever. You can also substitute spinach for the arugula if desired.
