So, I’m 12+ weeks in, and still eating pretty strict….. but my body is responding and loving it. So, I’ll keep doing it. I’m never hungry, and eating whole, healthy foods. But the whole, no ranch dressing has me a little cranky.
So I made my own Dairy Free version. And it has lots of flavor. And stores in the fridge nicely. A WIN in all the things.
Creamy Dairy Free Ranch
1 can 14 oz. full fat coconut milk
1 tsp. each garlic powder, kosher salt, dried dill, dried parsley
1/2 tsp. fresh black pepper
4 oz. goat cheese crumbles
Whisk together the ingredients, and keep sealed in a mason jar with lid in your fridge for up to 10 days.
Simple. Yummy. Full of flavor. And did I mention it’s creamy? Happy healthy eating! xo
