Fueled: Strawberry Almond Breakfast Cookies


1 1/2 cup gluten free flour

1/2 cup almond flour

1/2 cup gluten free oats

1/2 cup almonds

2 tbsp. ground flax seeds

2 scoops Nova Vita Chocolate protein powder

1/2 oz. freeze dried strawberries

1/2 cup dark chocolate chips

1 tsp. baking powder

1/2 tsp. salt

2 tsp. almond extract

4 eggs

1 cup coconut oil or 1/2 cup coconut oil + 1/2 cup ghee

Preheat the oven to 400 degrees.

Mix all the ingredients together until just combined. Scoop onto your parchment lined baking sheet. I used a 1/4 cup scoop. These cookies are larger than normal. Space about 2″ apart.

Breakfast is gonna be awesome.

Bake for 8-9 minutes. Remove from the oven and place a few slices of dehydrated strawberries on top and cool on the cookie sheet.

Bake your second batch. This recipe makes about 13-15 cookies. Keep in an airtight container for a week. Or they can be frozen. Perfect for meal prep.
