Grilled Key Lime Ginger Chicken

This recipe was inspired when I had left over limes I needed to use from a segment on Studio 5. I had some ginger, honey, and key lime juice, and fresh limes…. a little soy sauce, and it’s perfect!

Grilled Key Lime Chicken

4-6 chicken cutlets, fresh or defrosted
3 tbsp. grape seed oil, or olive oil
3 tbsp. key lime juice
1 tbsp. fresh ground ginger
Salt and pepper to taste
1 tbsp. soy sauce
3 tbsp. honey
Fresh limes for garnish

Whisk all ingredients together, and marinate your chicken for at least 20 minutes. Grill your chicken until juices run clear, usually about 6-8 minutes per side. Top with grated lime zest and sliced limes for garnish.

Serve with rice or noodles. Delish!
