Jalapeno Popper Rolls
In the mood for something carb loaded, savory and cheesy. THIS is your recipe. I’m serving it tonight with the spicy tomato soup that I made while in Montana. Here’s to my current favorite recipe! Yum.
Jalapeno Popper Rolls
Preheat your oven to 350 degrees.
1/2 cup warm water
2 1/2 tsp. instant yeast
1 cup scalded milk
1 cube soft butter (or 1/2 cup)
1 egg
Pinch of salt
4-5 cups all purpose flour
In a small sauce pan, prepare your milk. Place 1 1/4 cup milk, and turn on to medium heat. Let the milk begin to simmer, and bring to a boil. Remove the milk from the heat and set aside to cool. The milk will measure close to 1 cup when done.
Meanwhile, proof the yeast in the warm water. Once the yeast has bubbled, add the butter, 1/2 cup sugar and eggs. Then add the cooled milk, and 3-4 cups of flour. Turn on your mixer, and begin to bring the dough together. Add a bit more of flour, until the dough begins to come off the side of the bowl while mixing. Continue mixing for 3-4 minutes on medium speed. Remove the dough and place in a lightly greased bowl. Cover and let rise until doubled in size, about 1-2 hours.
3 cups shredded sharp cheddar cheese
1 fresh jalapeno sliced thin, seeds removed
3 green onions, sliced
4 oz. canned jalapenos diced
Bacon Jam
Whipped cream cheese
Divide the dough in to 2 rounds. Roll out one section at a time on a lightly floured surface, 1/2″ thick. into a big rectangle. Butter the dough slightly. Then spread 2 oz. of the canned jalapenos onto the rolled and buttered dough.
Then sprinkle 1/2 the diced onions on top. Then sprinkle 1 1/2 cups grated cheese on the dough. Tightly roll longest part upwards, like a cinnamon roll.
Cut the rolled cheesy dough into circles and place into a buttered baking dish. Repeat until both batches of rolls are assembled cut and placed into 9×13 baking dishes. Place 12 rolls in each buttered dish. This recipe makes approx. 24 rolls.
Place a little Bacon Jam on top of each roll, about 1 tsp. then sprinkle each roll with the remaining green onions, and the fresh sliced jalapeno. Let rise for 30 minutes. Bake at 350 degrees for 33-35 minutes. Remove from the oven and cool slightly before topping with some whipped cream cheese.
