Key Lime Pie Cupcakes…. the most requested cupcake

These cupcakes are literally the most requested cupcakes from my book. I’ve made these for several weddings, birthdays, just because, and for my neices baby shower last night. They are simply delicious- and surprisingly easy.

Here’s the recipe you’ve all been waiting for.

Key Lime Pie
1 box white cake mix
3 eggs
1 cup half and half
3 tablespoons key lime juice
1 can sweetened condensed milk
3 tablespoons key lime juice
1 recipe Whipping Cream
4 tablespoon grated lime peel (about 3 limes)

Mix together cake mix, eggs, half and half, and 3 tablespoons of key lime juice. Pour
Batter 1-2 tablespoons of batter into each paper liner. In a separate bowl, mix
sweetened condensed milk and the rest of the lime juice. Evenly divide the lime milk
into the batter filled cups. Top with remaining batter, and fill to ¾ full. Bake at 350
degrees for 15-18 minutes until cake springs back when touched lightly. Remove
from oven and cool completely on a wire rack. Frost with the whipping cream and
garnish with grated lime peel.

Whipped Cream: Beat 2 cups whipped cream until stiff peaks form. Add 1/4 cup – 1/3 cup powdered sugar. Fold together. Top cooled cupcakes.
