Lemon Garden Pea & Ham Gnocchi

Summer is perfect for skillet meals. One pan, hardly any dishes.

Yummy. Easy. Delicious gnocchi- all in a 15 minute meal- in a skillet!

Lemon Garden Pea & Ham Gnocchi

1 lb. prepared gnocchi

1 lb. ham, cut into pieces

1 small sweet onion, diced

1 cup chicken broth

1 cup fresh green peas

1 cup heavy cream

1/2 cup Parmesan cheese

1/2 tsp. nutmeg

1 tsp. red pepper flake

1 tsp. kosher salt

1 lemon

1 bunch of fresh basil for garnish

In a medium skillet, saute the ham and onion, until the onion is tender, and translucent about 3-4 minutes.

My current favorite brand- Walmart carries them.

Add the green onion and the gnocchi and continue to brown and soften the gnocchi. Cook stirring occasionally for about 5 minutes. Then add the chicken broth, seasonings, cream and cheese.

Layers of flavors.

Bring to a simmer to thicken slightly, the cut your lemon in half and squeeze the fresh juice into the skillet and stir to combine. Serve warm with fresh basil on top.
