We love mashed potatoes. AND we always put a little butter on top. Because it’s mashed potatoes. But this recipe lowers the carbs, and adds more vegetables to your dinner menu. Yum.
Magical Mashed Potatoes
3 russet potatoes, peeled and diced
1 head cauliflower, diced into large chunks
1/2 tsp. garlic powder
Fresh parsley if desired for garnish
In a large pot, bring to boil your water, potatoes and cauliflower. Add to the water 1 tbsp. of salt. Boil 20-25 minutes, until fork tender. Remove from the heat and drain the water.
With your mixer, or a potato masher, process the cooked cauliflower and potatoes and mash until desired consistency. Season with some garlic powder and more salt to taste. If the mixture is too dry, add 1-2 tbsp. coconut milk or sour cream. Makes 6-8 servings.
