My Top 10 EASY, HEALTHY and CHEAP meals

I’ve had some requests for a list of some easy, healthy and cheap meals ALL in one place. Recipes that are also pretty budget friendly, that can be made quickly, in the crock pot or instant pot. So here is MY Go- To list. AND, I do make these all the time for my family. So yes, I practice what I preach.

1- Roasted Veggie Hummus Bowl This meal is hearty and healthy and can be made quickly. It’s tasty and you can always substitute different veggies in place of the ones I suggest. Broccoli and cauliflower would be good choices too.

2- Beef and Mushroom Gravy with Smashed Cauliflower Everyone loves comfort food. And this recipes IS the definition of comfort food. You can also make it in the crock pot. It goes far, and tastes great for leftovers.

3- Creamy Tomato Gnocchi BAM! This recipe is the reason I always have Gnocchi on hand at all times. It’s cheap and filling. You can also add veggies right into the sauce, broccoli, sweet green peas, and asparagus to add more nutritional value.

4- Enchilada Breakfast Bowl This was a fun Dinner Rescue with Studio 5. But it can also be a from scratch meal, not just with leftovers. Don’t be afraid to add to this recipe what you have on hand. Clean out your fridge. Have some fun!

5- Savory Chili YOU can go wrong with a bowl of chili. Make it, then have a rice and chili bowl the next day for lunch. Buy some russet potatoes, and have chili potatoes the next night. It also freezes REALLY well, so great for making ahead for a quick and delicious meal.

6- Broccoli Cheddar Chowder This chowder hits the spot every time. The kids love the vegetables and as they eat this, and have a second helping, I pat myself on the back.

7- Instant Pot Chicken Soup This recipe came to me from a dear friend. I love it. The family loves it. There are no more words I can say about this. Just make it.

8- Moroccan Ragut with Poached Eggs Fancy, but fast, this delicious dinner is fantastic for an easy, healthy meal. Every time. Breakfast for dinner anyone?

9- Ham and cheese scones Man. I didn’t realize how many of these recipes involve comfort food type meals. There must be something to it though. I won’t deny the power of a great comfort food dinner. Serve with a side salad. Dinner is served.

Last , but not least…..

10- Sausage and pepper pasta This recipe is new and I felt like I needed to add a pasta recipe to the blog. We eat pasta about once a week, and it’s fast, cheap and healthy, unless you eat the whole bowl. Ha!

Family style Sausage and pepper pasta

Sausage and Pepper Pasta


4 cups mini red, yellow and orange sweet peppers

1 sweet onion

1 lb. Italian sausage, mild or spicy

1 tbsp. Dried basil

1 tsp. garlic paste or 1 clove garlic minced fine

Fresh basil

1 lb. of your favorite pasta, cooked aldente


Prepare and slice the peppers into rings, without the seeds. Slice the onion. In a large skillet, over medium heat, saute the onions and peppers until tender. Add the dried basil, and toss to coat. Then add the garlic. Add the sausage, and as it browns, cut it into smaller pieces using your spoon or spatula.


Once the sauce is cooked, place over the top of your cooked and drained pasta. Garnish with fresh basil, just before serving.
