Quinoa Hash- 2021 Food Trend- Breakfast

This recipe, is of course inspired by a meal I had with a friend. AND I knew I could make it at home, and enjoy it anytime I wanted. It’s great on it’s own, or with a side of scrambled eggs.

Food trends of 2021 include big, amazing breakfasts. We love breakfast at our house, for lunch and dinner too. When in doubt, make breakfast for dinner. #dinnerrescue

Quinoa Hash

2 tbsp. olive oil

3 large potatoes, shredded

¾ cup cooked quinoa

1 small onion, diced

1 green pepper diced

1 tsp. kosher salt

1 tsp. liquid smoke

½ lb. bacon, diced and browned

½ cup sharp cheddar cheese, grated

Green onion for garnish

Avocado for garnish if desired

In a large skillet, over medium high heat, start to sauté the shredded potatoes, in the oil. Turning every so often, as you cook, and form crispy edges on the potatoes. Add the quinoa.

Continue to brown. After 5-6 minutes add the diced onion and pepper. Then add the seasonings and liquid smoke. Continue to cook, and brown the shredded potatoes. Stirring every minute or two. Once the potatoes are tender and golden, top with the diced cooked bacon, cheese and green onions for garnish.

Top with an egg, or sliced avocado if desired.
