This quick and easy recipe is a combo of 2 of my regular go to chili recipes. Seemed perfect for our loaded baked potato bar at our Rooted In Truth Retreat, or with a side of corn bread. Yum. Missing all my retreat ladies. XO
Retreat Chili
3 lbs. ground turkey
1 small sweet onion, diced
2 cans light kidney beans, drained and rinsed
28 oz. crushed tomatoes
14 oz. roasted diced tomatoes
2 tbsp. chili powder
2 tsp. cinnamon
1 tsp. smoked paprika
1 tsp. cocoa powder
1 tbsp. apple cider vinegar
2 tsp. kosher salt
1 tbsp. oregano
In a large pot, heat over medium heat. Brown the ground turkey in a little olive oil, stirring occasionally, 8-10 minutes. Add the diced onion, and cook for 3-4 minutes, until the onions are translucent.
Add the rinsed beans, tomatoes, and seasonings. Stir to combine the flavors. Simmer for 25-30 minutes, stirring occasionally. This recipe freezes really well.
