Roasted Strawberry No- Bake Cheesecake

It’s so good. You’ll want to make it again and again.

This new recipe was inspired by my friend Shelli. It was her bday, and I wanted to make something super special for her celebration. I love roasted fruit, and I was aching to make something light and lemony. So here’s the new recipe, Roasted Stawberry No-Bake Cheesecake. Yum.

This would be a perfect dessert for Valentine’s Day or any day.

Each bite is AMAZING.

Roasted Strawberry No-Bake Cheesecake

1lb. fresh strawberries

1/2 cup brown sugar

2 tbsp. white balsamic vinegar

2 cups graham crackers crumbs

1/2 cup melted butter

14- 9 oz. solo clear cups

2- 8 oz. marscapone cheese

1- 8 oz. cream cheese

3/4 cup sugar

1 cup heavy cream

Juice and zest of 1 lemon

Preheat your oven to 400 degrees. Cut the fresh strawberries into pieces, and place on a baking sheet. (Keep 7 whole fresh strawberries for garnish.) Sprinkle the cut strawberries with brown sugar and balsamic vinegar.

Bake the strawberries for 25 minutes. Remove from the oven and cool completely.

Meanwhile, make the crust. Mix the melted butter and graham cracker crumbs. Place equal portions into each cup, repeat until all the cups have crust mixture in the bottom.

Make the filling. in a large mixer, combine the marscapone, cream cheese, sugar, heavy cream, lemon zest and juice. Whip on medium high speed until combined, and light and fluffy. Place filling into each cup, on top of the graham cracker crust. I used my cookie scoop to make things go fast, and the portions uniform. About 1/3 cup per serving.

Top each cheesecake filled cup, with a scoop of the cooled roasted strawberries, along with juices. Repeat until all cups are evenly filled. Garnish each cheesecake with strawberry cut in half. Chill before serving 20 minutes minimum.
