Stuffed Avocado Tuna Melt

Because why not? Lunch is totally on point. I’m all about the tuna melt, and stuffed avocados are dreamy. Why not combine the two? Okay. Twist my arm.

Stuffed Avocado Tuna Melt

3 large ripe avocados

2- 12 oz. can albacore tuna, drained

1/2 cup fage unsweetened yogurt or mayonnaise

Salt and pepper to taste

1/2 tsp. cumin

1 tsp. smoked paprika

1 cup diced tomatoes

1 jalapeno, seeded and diced

2 green onions, diced

Red onion for garnish

Cilantro for garnish

Baby greens or arugula for servings

Drain the tuna, and place the meat into a bowl. Then add the yogurt, seasonings, diced green onion, half the jalapeno, diced, and diced tomatoes. Stir together and set aside.

Preheat your broiler to 500 degrees.

Cut the avocados in half, lengthwise and take out the seed. Repeat. Place 1 scoop of the tuna mixture into each halved avocado. Top with a 1/2 slice of cheese, some more slices of jalapeno, and broil for 2-3 minutes, watching carefully. Remove from the broiler and serve with arugula, or baby greens, more tomatoes, sliced red onion. Such a great light lunch.
