Sweet Potato Gnocchi with Greens
I originally made this new recipe for my new Dinner Rescue meal plan. BUT because there was so many requests, I am sharing it with you today. Yep. You get this recipe! This recipe comes together is less than 20 minutes. FAST. FAMILY FRIENDLY. FABULOUS.
Start by cooking your onion, sweet potato in a large skillet. Then Add the greens just before it’s done.
And this is what you get. A great meatless meal, the whole family will love. We love Gnocchi. We eat it at least once a week. I mean, a potato dumpling with sauce. What’s not to love!
Potato Gnocchi with Greens
Serves 6

1 lb. gnocchi
1 tbsp. olive oil
1 sweet potato
4 cups collard greens or kale, diced
1 sweet onion, sliced
1 tsp. garlic powder or garlic paste (Gourmet Garden)
½ tsp. nutmeg
1 tsp. Kosher salt
1 cup coconut milk or heavy cream
1/3 cup Parmesan cheese or Nutritional Yeast
Black pepper to taste
Fresh Basil for garnish
Cook the gnocchi according to package directions.
In a large skillet, over medium high heat, sauté the onion, and sweet potato until the potatoes are fork tender, about 4-5 minutes. Add the collard greens or kale, salt, and nutmeg. Stir the skillet ingredients combine and soften the greens. Cook for another 3-4 minutes. Add the coconut milk or heavy cream, cheese or nutritional yeast. Heat through. The sauce will thicken as it simmers. Add the cooked gnocchi and stir to combine gently and warm through. Serve warm.
