The only way I make mashed potatoes these days….. and if I’m feeling good, I add just a titch of cream to make them even creamier.
Magical Mashed Potatoes
3 russet potatoes, peeled and diced
1 head cauliflower, diced into chunks
1/2 tsp. garlic powder
In a large pot, bring to boil, water, potatoes and cauliflower, Add 1 tsp. of salt and boil 20-25 minutes until fork tender. Remove from the heat and drain the water. With your stand mixer or potato masher, process potatoes and cauliflower until desired consistency. Season with garlic powder and more salt and pepper if necessary. If the mixture is too dry, add 1-2 tablespoons of sour cream, coconut milk or heavy cream. Makes 6 servings.
