Warm Spinach & Roasted Vegetable Salad
1 pkg. Great Value Root Blend frozen vegetables
1 tbsp. avocado or olive oil
1 tsp. Kosher alt
1 tsp. garlic powder
1/2 tsp. oregano
1/4 tsp. black pepper
4 oz. pecans
1/2 cup cherry & yellow raisins
4 handfuls spinach
Greek feta for garnish
Fresh Italian parsley for garnish
Raspberry poppy seed dressing
Preheat your oven to 400 degrees. Line a baking sheet with parchment paper. Place the frozen vegetables onto the lined baking sheet, season with salt, garlic and oregano. Then roast for 25 minutes. Then remove from the oven and cool slightly.
Place a handful of baby spinach on each plate. Top with some roasted vegetables, pecans, feta and parsley. Season with some fresh ground pepper. Then drizzle with some dressing just before serving.
