White Chocolate Pecan Cookies

Another fabulous recipe courtesy of my time in Montana. I can’t think of a better way to warm up the house. Can you?

Fresh, baked cookies.

White Chocolate Pecan Cookies

1 cup sugar

1 4 oz. pkg. white chocolate instant pudding powder

1 cup butter, soft

1 tsp. vanilla paste

2 large eggs

1 tsp. baking powder

1 tsp. baking soda

1/2 tsp salt

2 1/2 -3 cups flour

1 cup white chocolate chips

2 cups pecan halves

Preheat your oven to 350 degrees.

In a large mixer, cream together the sugar, pudding powder, butter, vanilla & eggs. Once light and fluffy, about 2-3 minutes, add the flour, baking powder and soda, salt & white chocolate and pecans.

Mix until just combined.

Place a 1/3 cup scoop onto a baking sheet, About 8 cookies per sheet, being careful not to over crowd the cookies.

Bake for 10-12 minutes, until set, but soft and slightly golden. Remove from the oven and cool completely. These cookies are so good, and can freeze as well.
