Beef & Gnocchi Stew

Skillet dinners are my favorite.

Easy dinner with things I had in my pantry and fridge. Bam! This one is a #winner. I ALWAYS try to keep a can or two or 10 of this beef on hand. Easy access for a great protein that is so versitile.

Beef & Gnocchi Stew

1/2 white onion, chopped

3 carrots peeled and chopped

1 tbsp. dried parsley

1 tsp. minced garlic

2 bay leaves

Saute the carrots and onions in a large skillet with some olive oil, until carrots are slighty tender and onion is translucent. Stirring occasionally. About 8 minutes over medium heat. Then add seasonings, and stir to coat. Continue to cook on medium low heat.

1 lb. packaged gnocchi

Let the gnocchi start to warm through in the dry skillet. Then add:

16 oz. beef broth

1 package McCormick Stew powder

Bring to a simmer. Then add:

28 oz. canned beef, drained and fat cleaned off, broth is a great addition as well.

1/2 cup frozen baby peas

Stir to combine. Heat through for another 5-8 minutes. Broth will thicken. Dinner is ready!!!

Fresh parsley for garnish

Dinner is SERVED!
