Cherry Crumble
Hey! Another fresh cherry recipe. I love seasonal baking, don’t you?
Cherry Crumble
Preheat your oven to 400°.
3 cups fresh pitted cherries
1 cup brown sugar
1 tsp vanilla extract
Pinch of salt
2 tsp. Cornstarch
Gently mix together to coat all the cherries. Set aside.
Make the crumble topping…
1 cup all purpose flour
1 cup oats
1 tsp cinnamon
1/4 cup brown sugar
1 tsp vanilla extract
1 tsp. Baking powder
Pinch of salt
1/2 cup butter, cold
Place the flour, baking powder, salt and sugar into a bowl. With a pastry cutter, work the butter into the mixture. Work quick, making sure the butter stays cold. Then add the oats, cinnamon, sugar and vanilla. Use your hands to mix together.
Place the cherries into a 10-12 inch cast iron skillet, top with the crumble topping.
Place in the oven and bake for 45-50 minutes.
Remove from the oven and cool slightly. Serve warm with vanilla ice cream, or whipped cream or both.
(*baking tip- I love adding some fresh fruit onto the crumble after it’s baked. Adds color and texture to the dish)
