Coconut Butter Cookies (NEW)

These cookies are melt- in- your- mouth good.

I’m so happy with how they turned out. And you can see that the bottom of the cookie is perfectly golden.

I love good cookies.

Coconut Butter Cookie

1 1/2 cups butter, soft
2/3 cup sugar
1 tsp coconut extract
2 tsp baking powder
2 3/4 cup flour
1 cup shredded coconut

Cream together the butter and sugar. Add the coconut extract and baking powder and flour and combine until the dough pulls away from the bowl.

Fold in your coconut- being gentle as not to over mix.

Scoop 2″circles (medium cookie scoop) and place in the freezer for 20 minutes to chill. Then remove and place on an un-greased cookie sheet.

Bake at 400 degrees for 10-12 minutes, until lightly golden, but still soft. Remove from the oven and cool on your cookie sheet for 2 more minutes. Then transfer to a wire rack to cool completely.

    I am truly impressed with your recipe. I love a great butter cookie recipe and the coconut adds a scrumptiousness, that makes a big difference. One great fact about your cookies, is that they are soft. I have always used a 2″ scoop in all of my cookies, and this one was a hit with family and friends.
