Easy Focaccia
2 cups all purpose flour
1 tbsp. instant yeast
1 cup warm water
1 tbsp. honey
Place into the mixer and bring together on low speed. Then add:
1 tsp. kosher salt
1 egg
Mix together for 4-5 minutes on low speed until the dough is thoroughly combined. Turn off the mixer and cover the bowl to allow the dough to rise for 30 minutes.
Pour the risen dough into a generously greased 9×13 pan. Then drizzle more oil on top, pressing into the oiled dough with your fingers. The oil will naturally go into the “pockets.”
Cover and rise for 30 more minutes. Then repeat with pressing your fingers into the risen dough. Then sprinkle the dough with a little fresh basil, Parmesan cheese & red pepper flakes if desired before baking. You can even add more olive oil if you need.
Bake at 425 degrees for 20 minutes, then reduce the heat to 375 degrees for another 10 minutes. Remove fron the oven and top with fresh basil. Cut into squares and eat.
