Egg Nog Cheesecake from 101 Gourmet Desserts for the Holidays

I always get so excited when the holidays arrive. Egg Nog is one of the first signs I see at the grocery store that make me smile. Have you ever made your own Egg Nog? I have a great recipe for that….. but here’s my version of a no bake cheesecake, with all the great flavors of Egg Nog. It’s from my new book, 101 Gourmet Desserts for the Holidays.

No Bake Egg Nog Cheesecake

2- 8 oz. pkg cream cheese, soft

1 cup heavy cream, whipped to stiff peaks

2 tablespoons rum extract or dark rum

1 1/2 teaspsoon nutmeg

½ cup powdered sugar

1 recipe Whipped Cream

1 recipe Gingerbread Crust (below)

Cream together cream cheese, heavy cream, rum, nutmeg and powdered sugar until smooth and creamy. Layer your cookie crust, tapping down to make an even layer. Then place your cheesecake on top of the cookie crust, then top with a dollop of whipped cream.

Gingerbread Crust

I love the smell of this crust as you are making it. It reminds me of the holidays.

2 cups gingerbread cookies, crushed

2 tbsp. sugar

6-7 tbsp. melted butter

Mix together all ingredients until a thick paste forms. Scoop mixture evenly into your 9” pie plate, tapping down to make the crust even and desired thickness. Place the crust into the freezer for 15 minutes to firm up. Then top with Egg Nog mixture.

Refrigerate for 1-2 hours or overnight to set up before serving. Top with whipping cream if desired for garnish.
