Fueled: Roasted Tomato Basil Toast

Simply stunning.

Favorite lunch of the summer?!? Hands down, tomato toast. This year, I’ve tweaked the recipe slightly to give me all the flavors, with more health added. #fueledapproved

Roasted Tomato Basil Toast

1 pint cherry tomatoes

4 oz. goat cheese

1 bunch fresh basil

Kosher salt

Olive oil

Garlic powder as needed

Dave’s Killer Bread- thin sliced good seed toasted

Preheat your oven to 400 degrees. Add your cherry tomatoes to the skillet and drizzle with some olive oil and sprinkle with kosher salt and some garlic if you’d like.

Your kitchen will smell like your favorite Italian restaurant.

Roast for 30-40 minutes.

Remove from the heat and smash just a little bit. Set aside.

Toast our bread, and spread some goat cheese on it. As much as you’d like. No judgment here. Then add a layer of smashed roasted tomatoes and fresh basil for garnish. Eat. Then eat some more. Yum. Tastes just like summer.

Be sure to make a TON because you will eat them all.
