Garden Series: Cheesy Zucchini Bread

This savory bread, really hits the spot.

I’m always looking for another great recipe to make with the hundreds of pounds of zucchini my garden produces. Here’s a savory bread…. full of cheese…. because cheese makes everything better.

Cheesy Zucchini Bread

2 cups flour

1 1/2 tbsp. baking powder

1 tsp. Kosher salt

2 cups grated zucchini

2 cups sharp cheddar grated

1/2 cup Parmesan cheese

2 eggs

1 1/2 cup milk

Preheat your oven to 350 degrees.

YUM.

Butter and line your loaf pan with parchment paper if desired. Dust with a little flour, set aside.

Stir together until just combined, the flour, baking powder, salt, zucchini, cheeses, eggs and milk. Pour the batter into the buttered loaf pan.

Bake for 70-75 minutes, until the loaf is golden, and a tooth pick comes out clean when inserted into the hot bread. Rest for 5 minutes, before removing from the loaf pan. Then cool completely on a wire rack. If you can wait that long. Really good plain, or with a little butter spread on top.
