Garden Series: Toasted Sourdough Bruschetta

Simple meals are usually some of the best.

This recipe is really so easy. I 100% believe the more basic the ingredients the better the tomatoes shine! And this recipe is MADE just for fresh garden tomatoes. It doesn’t get any better than RIGHT NOW to make these. I like to serve them for a light dinner, maybe with a fried egg on the side. Hot nights, it’s hard to slave over a stove for long, and this recipe is perfect for summer.

Toasted Sourdough Bruschetta

1 loaf, pre sliced sourdough, or fresh sourdough

3 large tomatoes, or 3 cups cherry tomatoes, diced

1 handful of fresh basil or basil paste

Kosher salt

Olive oil and/or both

Balsamic vinegar for garnish if desired

Brush your bread on both sides with butter or oil, or a mixture of both. Grill until marks are on both sides, and lightly crunchy. Repeat until all the bread is toasted.

Dice your tomatoes, add your sliced basil leaves, salt and oil and toss together.

You can spoon the tomatoes onto the bread just before serving, or let your guests put the tomatoes on their own bread slices. I like to plan 2-3 slices of medium bread for each person. Drizzle with balsamic vinegar if desired.
