Hoisin Salmon Bowl
Raise your hand if you need a new weeknight dinner idea? ME!!!
I love to incorporate fish into our dinner rotation. Salmon is for sure a favorite around here. And with a quick cooking time, dinner can be done is 25 minutes flat. I’m all for that kind of a combo.
Hoisin Salmon Bowl
2 cups cooked rice, your favorite brand (We love Jasmine)
1 English cucumber, sliced
Hoisin sauce
Black sesame seeds
2-3 lbs fresh salmon filet
Preheat your oven to 420 degrees.
Start your rice. Cook according to pkg directions. Set aside.
While the rice is cooking, prepare the salmon. Place the salmon filet onto a parchment lined baking sheet. Then season the salmon with Kosher salt, and a little olive oil. Place the salmon into the oven for a solid 20 minutes. Remove from the heat and cool slightly.
While the salmon is cooking, dice the cucumber, and set aside.
Assemble your bowl. Layer the rice, a piece of salmon, solid piece or broken and fresh cucumber and top with some Hoisin sauce, and black sesame seeds. Eat. And have another serving if you feel the need. Which you will.
