Let it be known that 2022 gardening season was awful with tomatoes, beans and carrots. But really good for basil. Had my first basil harvest and this is what I made. Can’t wait to enjoy some fresh pesto all winter long.
2 tbsp. raw cashews or almonds
2 tbsp. Parmesan cheese, grated
1/2 cup olive oil
2 cups basil leaves
2 cloves garlic
Pinch of salt
Pulse all ingredients together until desired consistency. This recipe freezes really well. If you double the recipe, it makes about 2 cups of pesto.
