-Melt in your mouth- Pumpkin Cookies with salted caramel frosting

Buttery, soft, pumpkin cookies.

Pumpkin Cookies with Salted Caramel Buttercream 

1 cup butter

1 cup sugar

1/3 cup brown sugar

2 eggs

1 tsp. vanilla extract

1 cup pumpkin puree

1 tsp. roasted cinnamon

1 tsp. baking soda

1 tsp. kosher salt

2 cups all purpose flour 

Preheat your oven to 350 degrees. In a small bowl, whisk together the softened butter, sugar and eggs and vanilla. Then add the pumpkin puree.

Then combine the dry ingredients, in a separate bowl, and add the dry to the wet. Slowly, stir until just combined. Don’t over mix the dough. Dough will be soft. Scoop the dough out onto a parchment lined baking sheet. (i use a small cookie scoop.) Place about 2″ apart. Bake for 8-9 minutes, and let the cookies stand for 1-2 minutes before removing to a wire rack. Cool the cookies completely before frosting. 

Salted Caramel Buttercream 

½ cup softened butter

1 lb. powdered sugar

½ – 2/3 cup salted caramel sauce

2-3 tbsp. heavy cream 

Whisk together 2-3 until smooth. If you want thicker frosting, add a little more powdered sugar to get your desired consistency. Sprinkle with roasted cinnamon for garnish if desired.
