Buttery, soft, pumpkin cookies.

I made these cookies today. And they turned out PERFECT. You can watch my stories, on INSTAGRAM… and see how this NEW recipe came together. Follow me @therealwendypaul… you’ll be so glad you did.

Pumpkin Cookies with Salted Caramel Buttercream

1 cup butter

1 cup sugar

1/3 cup brown sugar

2 eggs

1 tsp. vanilla extract

1 cup pumpkin puree

1 tsp. roasted cinnamon

1 tsp. baking soda

1 tsp. kosher salt

2 cups all purpose flour

Preheat your oven to 350 degrees. In a small bowl, whisk together the softened butter, sugar and eggs and vanilla. Then add the pumpkin puree.

Then combine the dry ingredients, in a separate bowl, and add the dry to the wet. Slowly, stir until just combined. Don’t over mix the dough. Dough will be soft. Scoop the dough out onto a parchment lined baking sheet. (i use a small cookie scoop.) Place about 2″ apart. Bake for 8-9 minutes, and let the cookies stand for 1-2 minutes before removing to a wire rack. Cool the cookies completely before frosting.

Salted Caramel Buttercream

½ cup softened butter

1 lb. powdered sugar

½ – 2/3 cup salted caramel sauce

2-3 tbsp. heavy cream

Whisk together 2-3 until smooth. If you want thicker frosting, add a little more powdered sugar to get your desired consistency. Sprinkle with roasted cinnamon for garnish if desired.

Happy baking and eating!! XO

Make sure you hide some before you they are G O N E.
