Make your beef- you can use your instant pot or crock pot for easy assembly.

Make your hollandaise sauce, set aside. Recipe is easy and fast (below). Toast your muffins, spread a generous amount of guac on each toast. Then place 1/2 cup of braised beef onto each guac covered toast. Top with a egg, drizzle with the hollandaise sauce. Add some salsa, fresh cilantro and diced onions. Place your egg yolks, and vinegar into a blender. Blend until its color changes to light yellow. Over low heat in a double boiler, simmer the yolks mixture until thicker, be careful not to scramble the eggs. Cook slow, stirring constantly.

Remove from the heat and whisk in the melted butter, adding some cayenne pepper for spice and kosher salt to taste.
