Peanut Butter Banana Cupcake (NEW)

I came up with this recipe after watching Netflix and enjoying The Cake Boss. I love Buddy. In fact, I’d love to meet Buddy and his whole team. Maybe one day.

And until then, I can bake these little beauties in my own kitchen anytime I want.

Peanut Butter Banana Cupcake (NEW)

1 butter cake mix
3 eggs
1 cup milk
1 tsp. vanilla
2 sliced bananas, ripe
1 recipe Peanut Butter frosting (below)

Mix together cake mix, eggs, milk and vanilla. Scoop batter into paper liners filling 3/4 full. Bake at 350 degrees for 15 minutes, until cake is slightly browned and springs back when lightly touched. Remove from the oven and cool completely.

Top with Peanut Butter Cream frosting, sliced bananas and drizzle with chocolate ganache if desired.

Peanut Butter Frosting from 101 Gourmet Cupcakes

1 cup peanut butter (chunky or smooth- I prefer smooth)
½ cup butter, room temperature
2 cups powdered sugar
3-4 tablespoons milk or cream
1 teaspoon vanilla extract
Combine butter and peanut butter in a large bowl, mixing together until light and
fluffy. Stop the mixer  before adding the sugar. Add sugar, 3 tablespoons of milk and

the vanilla. Start slow and mix together gradually increasing the speed. Mix until

smooth and creamy. Add 1 tablespoon of milk if the frosting is too thick.
