Salmon Quinoa Patties

A new recipe, which is quickly becoming a staple for my weekly meal planning!!! This salmon quinoa patty offers the traditional rich, decadent, flavor, and is so easy to put together. Super healthy too! Reheating for your meals throughout the week is also a bonus. Takes hardly any time! Healthy lunches are my favorite. Did you know that lunch time is where most of us have a problem staying on our healthy eating plan? If you plan ahead, you can always be outfitted with healthy lunches. Try this recipe for your next meal planning adventures.

Salmon Quinoa Patties 

1 lb. salmon filets

1 cup quinoa

3 green onions, diced

2 eggs

1 tsp. Kosher salt

1 tsp. basil paste or dried basil

1/3 cup mayonnaise or unsweetened coconut yogurt

1/3 cup Parmesan, or nutritional yeast

½ cup flour or gf flour

½ tsp. baking powder

Olive oil

Lemon wedges for garnish  

Place your salmon filets onto a parchment lined baking sheet. Season the salmon with a little salt and place the salmon in the oven. Turn the oven on to 420 degrees. Bake for 15-17 miinutes. Remove from the oven and cool slightly.  

Cook the quinoa. Follow package directions. Set aside.  

Meanwhile, mix together the remaining ingredients, quinoa, eggs, salt, basil, mayonnaise or yogurt, and Parmesan cheese or nutritional yeast, four and baking powder.   When the salmon is cooled, flake it with a for, leaving bigger pieces. Place the salmon into the mixture and gently fold together. Divide into 6 patties, and shape wit your hands.  

Heat a skillet over medium heat, add the oil, and pan fry the patties until golden and heated through. Remove from the skillet and repeat until all are cooked. Serve warm.
