Tomato Basil Grilled Chicken- Dinner Rescue

 

I’ve been creating a BUNCH of new recipes for Dinner Rescue. It’s an online monthly meal plan, menu, grocery list and recipes. New recipes each week for your family to enjoy. And of course, my family is enjoying them too…. because of course we have to taste test.

 

 

I made this recipe for 2 reasons. Summer + dinner = Grill every single night. Who wants to heat up their kitchen anyway?

 

And I’ve found a few great products to help the recipe come along faster and make assembly easy, especially if you want to use this recipe fro meal prep.

Tomato Basil Grilled Chicken

Preheat your grill to medium high heat.

 

Garden Gourmet Chunky Garlic paste

Garden Gourmet Basil paste

Olive oil

Kosher salt

1 cup crushed tomatoes

2 packets SEEDS OF CHANGE Quinoa and Brown Rice

Green onions

 

In a large freezer bag, place Garden Gourmet basil paste, about 2 tbsp. , and 1 tbsp. chunky garlic paste, 1 tsp. Kosher salt and some olive oil. Place the chicken in the bag to marinate. Let all the air our and seal tight. Marinate for at least 20 minutes.

 

Grill the chicken until the juices run clear, flipping once. (about 4-5 minutes per side) Remove the chicken from the heat and let rest 5 minutes.

 

Meanwhile prepare the Seeds of change quinoa mix according to package directions. Add 3 green onions, diced.

 

Plate your dinner. ½ cup of quinoa, chicken and about 1/3 cup crushed tomatoes. Delish.
