Enchilada Meatballs & Rice- Healthy & Low Cost Meal Series

Always on the look out for low cost meals my WHOLE family will love. This one happens to require little effort and low cost and everyone LOVED IT! I think it will become part of our regular meal rotation for a while.

Enchilada Meatballs
1 bag turkey meatballs (I used the Sam’s Choice brand)
28 oz. can crushed tomatoes
1 tsp. dried oregano
1 tsp. cumin
1 tsp. smoked paprika
1/2 tsp. garlic salt
1 tsp. dried parsley
Pinch of red pepper flakes
1/2 cup sharp cheddar grated for garnish
Green onion and jalapeno for garnish

In a large skillet that is oven proof, over medium heat, saute your meatballs in a little oil, browning on all sides, stirring occasionally. After about 5-6 minutes, add the spices and heat through, stirring to coat the meatballs. Once the spices are fragrant, about 1 more minute of cooking, add the crushed tomatoes, stir and bring back to a simmer.
Simmer over medium heat for 15 minutes to allow the flavors to combine. While the sauce is simmering, make your rice and salad.
