Greek Layer Dip

This is going to be a favorite around here and for my retreats. Love at first bite.
2- 7 oz. prepared hummus
1 can garbanzo beans, rinsed and drained
1/2 cup pickled red onions
1/3 cup sundried tomatoes
1/2 cup kalamata olives
2 cups diced cucumber
4 oz. Feta cheese
Fresh basil and parsley for garnish
Pepperoncini peppers, for garnish

In a small bowl, combine the sundried tomatoes, onions, olive, cucumber and feta cheese. Set aside.
Rinse and drain your garbanzo beans.
Assemble your dip.
On a large platter, spread the hummus on the bottom, making a “nest” for the filling.
Spread 1/2 the garbanzo beans on top.
Then top with the mixed tomato and olive mixtures. Drizzle with a good olive oil…

and sprinkle with the fresh herbs. Serve with vegetables or crackers. Delish.
