These scones are fresh tasting and full of spring flavor.
Fresh Strawberry Scones
2 1/2 cups flour
2 teaspoons baking powder
1/2 cup butter, cold and cut into pieces
1/4 cup sugar, plus 1 tbsp. for sprinkling
Pinch of salt
1 cup fresh strawberries, cut into bit size pieces
Sift together the flour and baking powder. Add the butter pieces and cut the four into the butter with a pastry cutter . Once the butter is in “pea” sized pieces, add the sugar, salt and buttermilk. Stir with a fork until just combined. Add the diced fresh strawberries and gently fold into the dough. Turn the dough out onto a floured surface and gently press into a rectangle, about 1 ” thick. Cut into 3″ squares, then cut diagonally making a triangle. Place each triangle onto a lightly greased or parchment lined baking sheet. Bake for 15 minutes at 400 degrees.
