Browned Butter Dark Chocolate Zucchini Bread
4 cups flour
1 tbsp. Baking powder
1 tsp. Baking soda
1/2 tsp. Salt
1/2 cup dark cocoa powder
1 tbsp. Cinnamon
Whisk these ingredients together. Set aside.
In a small sauce pan, melt one stick or 1/2 cup salted butter over low heat until light brown. You will be able to smell the better browning. Yum.
Once the better has cooled, add:
1 cup light brown sugar
1 tsp. Vanilla extract
1 cup milk
3 cups grated zucchini
Stir the wet ingredients until just combined. Then add the word ingredients to the dry ingredients . Add 1 cup dark chocolate chips. Fold the batter until it all comes together. Do not over mix.
Divide the batter into two loaf pans, gently greased and floured. Smooth the batter gently, and top with another one cup chocolate chips.
Bake at 350° for 40 to 45 minutes.
Remove from the oven and cool completely before slicing. If you can wait that long.
