Pesto Grilled Turkey Open Faced Sandwiches

Open faced sandwiches are quick to assemble, easy to prepare for and the whole family loves them. Here’s my version of a great turkey with pesto. Yum.
Pesto Grilled Turkey Open Faced Sandwiches
1 1/2 lbs. turkey breast, grilled and sliced thin (you can also use deli meat)
2 tomatoes, sliced or diced
Arugula
6 English muffins cut in half (12 total)
Havarti or Provolone cheese slices
1 cup fresh or jar Pesto sauce
4 oz. Goat cheese or cream cheese soft
Balsamic glaze
Preheat your oven to 400 degrees. Place your English muffins cut side up on a large baking sheet. Spread a little pesto and cream cheese or goat cheese. Schmear it on. Then layer with some sliced grilled turkey. Then top with your cheese slice. Bake for 8-10 minutes until the cheese is melted and the turkey is warm.
Remove the toasts from the oven and top with arugula, tomatoes and balsamic glaze.

Serve immediately. Yum.

Happy dinner time! xo
