Raspberry Pie Bars

Raspberry Pie Bars.

Delicious from the very start.

Hope you love them as much as my family has.

Filling:

48 oz. frozen raspberries

1 1/2 cups sugar

1 tbsp. cornstarch

Gently combine all ingredients and set aside.

Crumble:

1 cup all purpose flour

1 cup coconut flour

1 cup sugar

Pinch of salt

1 tsp. baking powder

1 cup butter, softened

Mix together and set aside.

Crust:

3 cups all purpose flour

1 cup almond flour

Pinch of salt

1/2 cup sugar

1 cup butter, cold cut into pieces

12 oz. water

In a food processor, combine the flour, salt, sugar, cold butter. Once the butter pieces are pea sized and evenly throughout in the flour mixture, add the water, while processing until the dough forms a ball and gathers together.

Preheat your oven to 375 degrees.

Press the dough in to a large baking sheet. Going up the sides. Pour the raspberry mixture. Pressing gently into the crust. Smooth in a nice layer. Top the raspberry mixture with the crumble, being generous. Bake for 48-55 minutes, until berries are bubbly, and crumble is golden. Remove and serve warm or room temperature with ICE CREAM. Of course.
