Pizza Rolls w/ my sister
My sis is visiting…. and we made lunch for all the kiddos. I made my trusty recipe for Feather Rolls, then added pizza sauce, mozzarella cheese and pepperoni. Bake. Eat. And eat some more.
Pizza Rolls
Preheat your oven to 400 degrees.
1/2 cup warm water
2 1/2 tsp. instant yeast
1 cup scalded milk
1 cube soft butter
1/4 cup sugar
2 eggs
Pinch of salt
4-5 cups all purpose flour
16 oz mozzarella cheese, shredded
2 cups pizza sauce
1 small pkg. pepperoni slices
In a small sauce pan, prepare your milk. Place 1 1/4 cup milk, and turn on to medium heat. Let the milk begin to simmer, and bring to a boil. Remove the milk from the heat and set aside to cool. The milk will measure close to 1 cup when done.
Meanwhile, proof the yeast in the warm water. Add 1 tsp. sugar to make the process go a bit faster. Once the yeast has bubbled, add the butter, 1/2 cup sugar and eggs. Then add the cooled milk, and 3-4 cups of flour. Turn on your mixer, and begin to bring the dough together. Add a bit more of flour, until the dough begins to come off the side of the bowl while mixing. Continue mixing for 3-4 minutes on medium speed. Remove the dough and place in a lightly greased bowl. Cover and let rise until doubled in size, about 1-2 hours.
Divide the dough in half. Roll the dough into a rectangle on a lightly floured surface. Roll to 10″x18″ rectangle. Spread 1 cup pizza sauce, over the rolled dough, leaving 1″ clear around the edge. Sprinkle with 1 cup shredded cheese. Top with pepperoni. Roll the dough tightly, starting at the longest edge, toward the other longest edge. Seal the dough with your fingers. Then cut into 2″ discs, and place on a lightly greased baking sheet. About 16 rolls per baking sheet. Repeat with the other half of the dough.
Bake at 400 degrees for 20-25 minutes. Brush with melted garlic butter just before serving.
*Garlic butter: 2 tbsp. melted butter, 1/2 tsp. garlic seasoning.
