Roasted Butternut Squash Pizza w/ Gorgonzola & Sage Honey

For this pizza we are LAYERING flavors big time. Roasted butternut squash. Mushrooms. Onions. Gorgonzola. Cheese sauce. Sage Honey.

I am really loving the sweet savory combination for comfort, and this pizza is a perfect representation of that. A surprise for your taste buds. How often do you make homemade pizza? We usually make pizza about once a week. I can’t wait to put this recipe on our regular rotation.

Roasted Butternut Squash Pizza w/ Gorgonzola & Sage Honey

Preheat your oven to 430 degrees.

3 cups diced butternut squash

2 cups sliced mushrooms

Olive oil

Kosher salt

2 tbsp. butter

2 tbsp. flour

2 cups milk

1/2 cup Parmesan cheese

1/4 tsp. nutmeg

1/4 tsp. kosher salt

3 oz. Gorgonzola cheese

1 green onion, diced

1 tbsp. American Raw Honey, Sage honey

Make your dough, and while it’s rising, roast your vegetables.

Place your butternut squash cubes and sliced mushrooms on a large baking sheet in a single layer. Then Drizzle the vegetables with some olive oil and sprinkle with some salt. Roast for 20-25 minutes, until tender, and golden edges…. mushrooms are cooked. Remove from the heat and cool to touch.

In a small sauce pan, over medium heat, melt the butter. Add the flour and whisk together, and cook for about 1 minute. Then slowly add the flour, whisking together to make a nice rich sauce. As the sauce bubbles, it will thicken. Cook for 4-6 minutes, stirring occasionally. Add the nutmeg, salt and Parmesan cheese and whisk together. Remove from the heat and set aside.

Dice your green onion, and set aside.

Assembly.

Once your dough has risen and is ready to bake, press the round of dough into the center of a large baking stone or baking sheet. (You can sprinkle the pan with some cornmeal or olive oil to prevent sticking.)

Use the Parmesan sauce as your base….. spreading a nice layer on top of the pizza dough. Then top with the roasted vegetables around the whole pizza. Sprinkle the roasted vegetables with some gorgonzola cheese crumbles and diced green onion. Bake your pizza for 20 minutes, crust will start to brown. Turn your oven to broil at 500 degrees. And broil, watching closely for 1-2 minutes. Cheese will be bubbly, crust dark brown, and ready to eat. Remove the pizza carefully from the oven and cut into slices. Drizzle with Sage Honey to finish off this amazing recipe.
