Easy Cashew Chicken- A 20 minute meal

Easy dinners are my jam. This one takes only 20 minutes, you can add vegetables from your garden to make it go further, or add rice for a heartier meal. Cashew chicken is a favorite around here.

You can now make this great take out dish in your own kitchen. Healthier & in only 20 minutes!

Cashew Chicken

1 lb. ground chicken

2 cups diced celery

4 oz. shredded carrots

1/2 white onion

3 green onions for garnish

1 cup roasted cashews

1 tsp. dried parsley

1/4 cup coconut aminos or soy sauce

1 tbsp. Mirin

Additions: diced zucchini

Garnish with Cilantro & Yum Yum Sauce

In a large skillet over medium heat, brown the ground chicken, diced onion until the chicken is cooked through, stirring occasionally. Then add the celery & carrots. Stir to combine. Once the celery is slightly tender, add the parsley, coconut aminos & Mirin. Stir to combine. Bring to a light simmer. Add the green onion, and cashews. Once warmed through, then serve by itself or with rice for a heartier meal. Top with cilantro & yum yum sauce.
